This recipe was created by Joshua, a single man who turned his life around with real food, using GAPS to support his body. Joshua started GAPS in April of 2018 due to acute colitis brought on by a C. diff infection. As a pro level Pickleball athlete, he was putting his training and competitions on hold due to his illness. He expected to be out of the game for a year or more, but instead, thanks to GAPS, he was playing in a matter of weeks. He is still on GAPS and doing very well. He is healthy and rebuilding lost gut flora wiped out by antibiotics. He makes many homemade probiotic foods and tells others of the benefits of the protocol. He is leaner and stronger than before.
Gaps Waffles:
4 pastured eggs
3/4 cup almond flour
1/4 cup coconut flour
1/4 tsp celtic sea salt
1/4 tsp baking soda
1-2 tablespoons honey
1 tsp vanilla extract
2 tablespoons melted pastured butter
Mix all ingredients well with a hand whisk . Heat and coat the waffle iron with butter, pour a scoop of batter into the waffle iron and cook until done. Top with pastured butter and a drizzle of honey. Sprinkling cinnamon on top can add more variety.   
This recipe, minus the vanilla and honey, makes a delicious savory bread.
