Stuffed Peppers – GAPS Approved
Stuffed peppers are a comfort food that is delicious and satiating. The recipe is simple and presents well. To make stuffed peppers take organic peppers straight from the organic garden. Saute one pound of pastured organic pork sausage with 4 organic onions, three chopped carrots, 5 cloves of garlic and two cups of cauliflower rice.
Mix the ingredients together and add salt and pepper to taste. Core the peppers and remove seed. Cut the bottom of the peppers so that they lie flat in a pan without wobbling. Fill the peppers with the sausage filling.
Top with cheddar cheese.
Cook at 400 degrees for 25 to 30 minutes or until the cheese is cooked to a golden brown.
Each individual pepper makes a complete meal of meat and vegetables. It’s delicious and reheats well.
