Chop up two pickling cucumbers, the finer the better.

In a pint mason jar add an oak leaf (a grape leaf can also be used) to the bottom or the jar.

Mix together cucumbers, one diced garlic clove, one onion, one teaspoon mustard seed, one tablespoon local honey, half of one red pepper and two teaspoons mineral salt. All ingredients should be organic.

Once the ingredients are added to the jar, fill with filtered or spring water up until one inch of the top. Add another oak leaf to the top for crispier relish. Press the ingredients down below the water line with the oak leaf. 

For best results use an air lock like this or crock rocks like these. 

Leave on the countertop for 3 days then refrigerate.
