Cooking a pig’s head is daunting, but honestly, one of the easiest things to cook. The local processor or pastured meat sales business can provide you with a head. Some are sold without the cheeks, jowls, as they are used as a form of bacon. The price of a head ranges from free to $40. Pastured meat is best. 

In a roaster, add the head, onions, garlic, celery and whatever other vegetable you desire. Salt and pepper the head for seasoning. {This post contains an affiliate link which pays for this site}. This one also works. 

Put a cup of water in the bottom of the roaster, put the lid on and cook at 225 degrees overnight. 

With two forks, remove and shred the meat, including the tongue, which is frankly, the best part.
